Happy Friday and happy trails! I’m heading out of town for the weekend and bringing my favorite snack with me…trail mix. Call me lame. Ok I’m lame. But for real, I absolutely LOVE trail mix and especially this one.
Sweet and salty, fruity and nutty, spicy and sweet, the combinations go on forever so what’s not to love? Plus, there’s health benefits! Those chocolate covered blueberries, well not so much but the nuts are heart healthy. I actually use completely raw nuts as most nuts you buy in pre-made trail mixes are covered in oil and baked with salt. Trying to be sneaky by putting unhealthy fats in our trail mix. Not cool trail mix people.
But back to the mix. When creating the perfect trail mix it’s all about personal taste. I actually didn’t list measurements in the recipe for this reason. Personally I love the crunch of the raw nuts combined with the sweet flavor from the coconut and chocolate covered blueberries so I opt for a 50/50 ratio of nuts and sweet toppings. Totally up to you though! If you choose a 90/10 ratio of sweets to nuts….hey we’re not judging;)
Dark Chocolate Blueberry and Coconut Trail Mix
Ingredients
Pecans (Now Real Food Raw Pecans)
Walnuts (Now Real Food Raw Walnuts)
Almonds (Now Real Food Raw Almonds)
Dark Chocolate Covered Blueberries (Found at Trader Joes)
Roasted Coconut Chips (Found at Trader Joes as well)
Homemade Coconut Granola (recipe adapted by Two Peas and a Pod)
Instructions
1. Make your homemade coconut granola using this recipe. I halved the recipe so it was thinly spread in the pan to create more of a granola bark. Watch carefully while baking as mine only took 30 minutes to bake. It will still be soft when pulled out of the oven, but will harden into granola as it cools.
2. Once completely cooled, break into chunks with a fork.
3. Combine all other ingredients with cooled granola and store in an airtight container.
