Growing up pancakes were a weekend staple in my house. My mom was the cook of the house but my dad was the pancake man.
Every weekend when I would have friends spend the night, they would wake up and ask what kind of pancakes my dad was going to make. Sometimes he would throw fun toppings in them (chocolate chips, sprinkles, m & ms, etc.) and other times he would make fun shapes out of them (initials, Mickey Mouse characters, footballs, christmas trees and just about anything in between).
And no matter the shape, my mom always got her special request pancake: chopped pecans mixings and strawberry syrup on top. It was her favorite. I remember laughing that she wanted pecans in her pancakes instead of m & ms. I mean who wants boring nuts in the pancakes over chocolate?
Not me.
But even years later, pancakes are still a brunch staple in my parent’s house. When my brother and I go home for the weekend, my parents always ask that we don’t make plans for one of the mornings so we can all sit down together and have brunch as a family like the old days. It’s one of my favorite parts about going home still.
So this year for Mother’s Day to keep the tradition going, I’m whipping up my mom’s favorite pancakes with homemade strawberry syrup.
But first a little background/funny story about how this recipe idea came about.
Last month, Steve came home from work and said “hey, we need to add a pressure cooker to the wedding registry”. I looked and him and thought: 1. he knows what a pressure cooker is? and 2. what is he wanting to make with a pressure cooker? So I laughed and said, “ok, why?”. “I don’t know but everyone at work said they’re really cool and we need one” <-legit reason.
Fast forward to last week when I received the Bella 10-in-1 Multicooker (c/o) and holy moly, were his co-workers right. This thing is so COOL!! Typically when it comes to making things homemade such as this strawberry syrup, I end up just skipping due to all the dishes and time but with the pressure cooker you just throw everything in one pot, click the button and ta-da homemade strawberry syrup in a snap. It’s amazing and so easy to clean too.
I already have a running list of things I want to make it in next, but first I’m sharing my homemade strawberry syrup recipe for you to enjoy this weekend with your own mom. Plus, if syrup is not your thing you can skip adding the maple syrup and use it as jam on toast instead!
