National Pancake Day

Happy National Pancake Day! You probably didn’t even know it was today, but lucky for you I used to do PR for restaurants where I learned there is a food to celebrate every day of the year. Check it out here. While I don’t celebrate a food every day, I do celebrate some of my favorites including pancakes. 
I had a few girl friends over this past weekend for brunch before we headed out to dose market for a day of shopping. I made some of my favorite whole wheat pancakes and laid out a variety of toppings for the girls to create their own combinations. It was the ultimate girls day including Sex and the City playing on repeat while we drank mimosas. Between the pancakes, shopping and lots of champagne we had a wonderful time and the perfect end to the weekend. Pancake Bar 

1. Whip up some of your favorite pancakes or check out my go-to recipes below
2. Line a cupcake pan with printed cupcake liners turned inside out. Fill with various topping choices such as: fruit, granola, chocolate chips, peanut butter, sprinkles, crush candy, Nutella, whipped cream, coconut, etc.
3. Feel free to get creative and make signs for your pancakes and bar. I framed a “Build Your Own Pancake Bar Sign” and stuck labels for each type into the pancakes. I also put everything out on paper and wrote each topping on the paper for an added touch!
