It’s Friday and I can’t stop cheesin’! Smiling and eating cheese, that is. I’ve recently found a new love and I don’t mean a boyfriend, I mean for goat cheese. I always used to order my sandwiches or salads without the cheese until I tried goat cheese. The creamy and rich taste adds the perfect touch to almost every dish; paninis, salads, omelettes, toast..you name it.
With a busy schedule this week, I knew I had to plan ahead for meals. I threw together this simple and delicious salad that made for a quick and easy dinner the other night and perfect for lunch leftovers today. You can mix it up and use tuna instead of chicken or a greek vinaigrette for an extra flavor boost. I kept it simple and fresh, with lots of goat cheese of course!
Greek Lemon Chicken Salad
Ingredients:
-Lettuce, I did a combination of butter leaf and power green mix (baby kale and spinach)
-1 cucumber, chopped
-1 package of grape tomatoes, halved
-3/4 cup goat cheese
-1 cup couscous or quinoa
-2 boneless skinless grilled chicken breasts (I seasoned them with a Zesty Lemon spice blend and olive oil)
-1/2 of a lemon
-Dollop of hummus
Directions:
-Toss first 4 ingredients together in a bowl
-Layer couscous, chicken and hummus on top of each serving and top with a fresh squeezed lemon slice and pepper
