My favorite thing about the summer season would have to be all the fresh ingredients that are available to cook with. Even though my kitchen looks like something out of a doll house, I still enjoy whipping up some delicious meals!
I always try to make recipes that include a variety of fruits and vegetables to open my eyes to new ways to cook with them and to keep me healthy:)
Here are a few of my favorite recipes I have made lately:
As much as I love cooking, my true passion in the kitchen is baking! I’m a sucker for anything sweet especially a homemade treat. I tried doing all those crazy healthy dessert recipes using black beans in brownies and swapping out every unhealthy ingredient with a healthy one, but the taste was never the same. Plus, at the end of the day if you’re going to have a sweet, you want one that tastes good. I still try to keep my sweets on the healthier side, because to be honest I could probably eat the entire pan of brownies or jar of cookies haha.
Here are a few of my baking substitutes that have never let me down:
-Substitute half of the amount of butter with vanilla greek yogurt
-Swap 1/3 of all purpose flour with whole wheat flour or swap half all purpose with white whole wheat
-Cut back on 1/4 cup granulated sugar (it’s such a small amount you’ll never be able to tell)
-Swap one whole egg with two egg whites
I use these swaps on almost all of my baking recipes and have never been let down. I won’t claim that the recipe is then “healthy”, but it’s at least a little healthier.
