There’s cocktails and then there’s sparkling cocktails.

To be honest, my cocktail game is super lame these days. It’s not that I don’t drink cocktails. Trust me, it’s more the opposite..one too many. The thing is, although I love sweets I’m not a fan of sweet drinks. I mean strongly NOT A FAN because I would rather eat my dessert (bring on the cookies and brownies) and also as much as I try to tell myself when I go out that there’s still that college girl who could drink whatever random sugary concoction was available at the party inside of me, the next day when I wake up I’m immediately reminded she’s gone…long gone.

That girl now goes to the bar and asks the waitress/waiter, “whats your most refreshing cocktail?” It’s almost as if I know I’m going to die the next day because my hangovers these days occur after 1 glass of wine, so might as well prepare myself with something refreshing and hydrating. 

When it comes to refreshing cocktails, my go to is a champagne cocktail. Typically these are lighter, slightly fruity or citrusy and the best part, have bubbles. Who doesn’t love a glass of bubbles?

For this recipe, I’m putting a spin on your average moscow mule with a cocktail that is perfect for this weekend’s Easter celebration with family or a brunch get together with girlfriends. Easy to whip up, only a few ingredients and topped with fresh lime slices and mint leaves for that added touch of “refreshing” taste.
