Last Minute 4th of July Dessert
I always say I’m going to cut back on dessert, but I mean this one has fruit on it so it doesn’t full count as dessert right? Plus this weekend is America’s birthday and that definitely calls for dessert. 
See, two legit reasons not to cut back right there. 

So let’s move forward with these desserts before they’re gone. Usually when we think of birthdays we think cake, but when you plan last minute like I’ve been doing a lot of lately you go with the quick last minute dessert. In this case a frozen cheesecake.
Yup, that’s right. I just said frozen cheesecake. Something I never thought I would say on the blog as I’m a firm believer of homemade dessert, but key words here are “last minute”. Literally you could prep this baby as your driving to your party. Ok so not if you’re the driver but you get my point.
Plus the best part is nobody would ever guess it was frozen..or vegan or gluten-free or dairy-free or soy-free…whew that’s a mouthful and our little secret;)
So if you’re heading to a 4th of July celebration this weekend or just a backyard BBQ, be sure to offer to bring the dessert because these will make for the perfect crowd pleaser without the kitchen mess.

Mixed Berry Cheesecake

Ingredients
1/4 cup Strawberries (halved and tops removed)
1/4 cup Blueberries
1/4 cup Blackberries
1/4 cup Raspberries
Instructions
Lay cheesecake out 30 minutes before prepping to defrost. Rinse fruit and pile on top. The water from the rinsed fruit will help them stick to the top of the cheesecake a little.

Chocolate Covered Strawberry Cheesecake

Ingredients
3 Large Strawberries
1 cup of Whipped Cream
2 cups of Semisweet Chocolate Chips
Instructions
For the Chocolate Layer: Place chocolate chips in a microwave safe bowl. Heat in 30 second intervals on high until completely melted. Pour the chocolate on top of the cheesecake and using a spatula spread it evenly over the top to create a chocolate layer on top of the cheesecake. Place in the freezer for 10 minutes to harden while prepping your pipping bag.
For the Garnishes: Fill a piping bag with a large star tip half way with whipped cream. Using a circle technique (similar to frosting a cupcake), create 6 whipped cream circles on top of the chocolate layer. Place strawberry halves cup side up on each whipped cream pile.
