St. Patrick’s Day Cocktail: Vanilla Mojito

Fridays call for good friends and a cocktail in hand especially on a holiday weekend! This weekend is the big St. Patrick’s day celebration in Chicago. A full day of festivities including a parade downtown and dying of the river green. St. Patricks day is a big deal here in the city and while I don’t know how much parading I’ll be doing, I do on the other hand know I’ll be celebrating. Between one of my best friends turning 24 this weekend (ek I guess we should start saying we are in our mid-twenties now) National Pi Day and St. Patricks day, this weekend will be full of celebrations. 

I know I typically go for a DIY or some type of dessert recipe for the holidays, but not this time. I decided to switch it up a little with a cocktail recipe. After all it is Friday, right?

With a twist of a lime, a splash of sparkling water and a drop of vanilla, this cocktail creation is so easy to make and perfect for a green themed celebration.


Vanilla Mojito Recipe

Ingredients
¼ cup mint leaves
2 tbsp. fresh lime juice
¼ cup light rum
1 ½ tbsp. sugar
1 wedge of lime
1 tsp. Rodelle Vanilla Extract
Sparkling water (I used lime flavored)

Directions
-In a medium bowl place mint leaves, sugar, and Rodelle Vanilla Extract. Use a wooden spoon to mash the mixture until the oils of mint leaves are fragrant and released.
-Add the lime juice and light rum and stir until sugar dissolves.
-Let mixture sit for at least 2 hours.
-When ready add ice to cups and a little more fresh squeezed lime then fill with sparkling water.
-Add mixture, stir and garnish with a lime wedge.
