A “Gal”entines Brunch

Valentines Day is one of my favorite holidays, it’s the
perfect excuse to wear pink and make everything heart shape for the day!
Although it’s known for its romance with your significant other, it’s also the
perfect time to celebrate with your girl-friends. This weekend while I went
home to be my boyfriend’s number one fan in the bleachers for the last time at
his hockey game, I also met up with one of my best friends, Meg, for a special
Valentines inspired brunch.

This brunch was the perfect quick and easy way to celebrate
Valentines day with your friends. I picked up a few things from the Target $1
section, made some fun heart and lip funfetti pancakes (recipe below), and
enjoyed the morning catching up with Meg.

Quick and simple ideas to throw your own “Gal”entines
brunch:

Dye your milk pink with a drop of pink icing dye
(found at any craft store)

Decorate your everyday dinner plates with a
simple red charger underneath (can find them for cheap at Walmart)

Add heart napkins and red straws (Target 1$
section)
©      
Use Valentines gift wrap as a table runner
©      
Add red and pink sprinkles to your food!

Now time for the recipe so you can make these pancakes for
your loved ones this weekend! I will say these pancakes are perfectly sweet
without syrup, so I only suggest putting on a little and I have a major sweet
tooth so you may even want to try them with no syrup at first.
I always like to pull out all my ingredients before I start
baking and put them away as I use them. That way I know I didn’t miss an
ingredient in the process. Time to get mixing and cooking!
There’s no such thing as too many sprinkles in my book so I
suggest to apply generously!

Funfetti Pancakes Recipe

©      
1 cup all-purpose flour
©      
½ cup yellow cake mix
©      
¼ tsp salt
©      
2 tsp baking powder
©      
1 egg
©      
1 cup milk (any milk will work, I used skim)
©      
1 ½ tsp granulated sugar
©      
1 tsp vanilla
©      
2 tbsp vanilla yogurt
©      
Sprinkles
Instructions:
1.      
In a small mixing bowl combine flour, cake mix,
salt and baking powder
2.      
In a medium size bowl, slightly whisk egg until
yolk is lightly beaten
3.      
Add milk, sugar, vanilla, and yogurt to the egg,
whisking until thoroughly mixed
4.      
Slowly add flour mixture to egg mixture while
stirring just until combined
5.      
Heat a skillet to medium-low heat and place the
heart cookie cutter on the frying pan (make sure the cutter is heat resistant
and I found out later that it was easier to make circle pancakes and cut out
the shapes after)
6.      
Add pancake batter to the pan, then top with
sprinkles
7.      
Flip once small bubbles start to form on top
then remove from heat when cooked completely through, add syrup and enjoy!

You may laugh at the fact that I look
overly excited to be pouring syrup on pancakes, but if you know me and how much
I LOVE pancakes then this smile will not surprise you. My absolute favorite way
to eat my pancakes are, embrace yourself, with a smear of natural peanut butter
melted on top with slices of banana on that, topped with maple syrup and
granola. Sounds like a lot but man it’s to die for, trust me! I always laugh at
the fact that my boyfriend, Steve, won’t come near pancakes unless they’re
chocolate chip and even then he’ll only have one or two. I, on the other hand;
blueberry, pecan, chocolate chip, pumpkin, wheat, you put it in front of me
I’ll eat it and maybe a second or third, heck why not a fourth haha. I’m still
working on easing Steve into my breakfast obsession, maybe one day!

I had a wonderful weekend home with friends
and family celebrating birthdays, Valentines day, and Steve’s last hockey game!
I’ve enjoyed being his embarrassing girlfriend these past years, who brings
treats for the team and cheers obnoxiously from the bleachers. I’m sad to no
longer have games to go to, but am incredibly proud of the hockey career he has
had and the games I have gotten to support him at! I guess I’ll have to find
other ways to embarrass him now.J
