Pop the champagne…oh wait it’s only Tuesday.
Anyone else have those weeks when it’s only Tuesday, but they are already dreaming about Friday? Well when your week involves these champagne popsicle bellinis you bet I’m dreaming about the weekend. Those dreams started Sunday night when I realized last weekend was already over.
Ugh, Monday again?
Luckily it seems like the week is flying by but this weekend still can’t come soon enough. Between these delicious drinks I’m already planning for and one of my highschool best friends coming in town to visit, I’m pretty much already in the weekend mindset…sshh don’t tell my boss;)
But in all seriousness.
These drinks are UH-MAZING! Bellinis have always been one of my favorite cocktails but with the summer heat in full swing, having warm champagne at your outdoor party isn’t the most appealing.
Ssoooo (drum roll please..)
I present to you the perfect solution: peach puree pops (peach-raspberry that is!). I wish I could say these were fancy pops so I could sound all impressive and such but in reality these are so easy you could make them with your eyes closed. Well, maybe we don’t do that since a blender and sharp objects are involved.
Eyes open? Ok, great.
To keep things quick and easy I used my new Bella Housewares Rocket Extract Pro Plus Multifunctional Blender to quickly puree my fruit and then pop them into the molds in a snap. Side note: I seriously can’t stop blending everything and anything in this blender. My favorite is peanuts for homemade peanut butter…sooo addicting.
But back to the pops…and bubbles.
So you can use pretty much any fruit combo you would like for the pops and then a splash of your favorite bubbly to top it off. I went with the Torressella Prosecco Extra Dry but if looking for something sweeter you could even do a sparkling rose. - -2 whole peaches
- -1/2 cup fresh raspberries
- -2 Tbsp honey (you can do more if you prefer your drinks a little sweeter)
- -1 bottle of Torresella Prosecco
- Bring water to boil in medium size saucepan.
- Slice peaches into cubes (seeds removed) and add to boil water. Lower heat and simmer for 2-3 minutes. Remove from heat and let cool.
- Using a blender puree peaches and blend in honey and raspberries. Pour mixture into popsicle molds and freeze overnight.
- Pop out the popsicles, place one in each cup and pour champagne over to enjoy!
