Banana Yogurt Waffles  

Well that’s a mouthful. A mouthful of delicious, chocolate, banana and peanut butter drizzled goodness that is.

The other weekend I was in a major dilemma. A “what the heck do I eat for brunch” dilemma. 

With a boyfriend who’s not the biggest fan of brunch (I know, sometimes I think he’s not human too), some bananas that were turning brown and me with a craving for chocolate 24/7, I had to get creative.  Hmm, peanut butter, bananas, chocolate, and oh yeah that diet I said I was going to start…

And ta-da, this beauty was made! With a few of my favorite ingredients, some healthy substitutions and the boyfriend’s approval;)

A little mix of this, sprinkle of that and drizzle (ok, pour) of glaze and these waffles are sure to please all the weekend brunch cravings. 

For these waffles, I prefer to cook them on the lighter side by using a rotating waffle iron like this one from Bella to get an even cook on both sides. Plus, I have a bad habit of trying to do 50 things at once and luckily this life saver lets you choose the temperature so you can double-duty making the glaze without burning the waffles.
